  1. Remove the seeds from the Medjool dates and open them slightly. If the dates feel firm, soak them in hot water for a few minutes or warm them briefly in the microwave to soften.
  2. Place the dates on a parchment-lined surface and cover them with another sheet of parchment paper. Using a glass or flat surface, press them into an even, compact layer.
  3. Now, spread the pistachio butter evenly over the pressed date layer. You can microwave it if it is too thick to spread.
  4. Chop almonds and pistachios.
  5. Then sprinkle chopped pistachios and almonds over the top.
  6. Melt the dark chocolate and pour it over the layered base. Spread it evenly while the chocolate is still warm.
  7. Sprinkle additional chopped pistachios on top, then refrigerate for 30-40 minutes or until the chocolate is fully set.
  8. Once firm, cut into bars or squares using a sharp knife and serve.
  9. Enjoy it as it is as a snack or with a cup of milk, coffee, or tea.
