  1. Trim and peel the kiwis. Then slice them into rounds about 1 inch thick.
  2. Place them on kitchen tissue and pat it dry using a kitchen tissue.
  3. In a microwave-safe cup or using a double boiler, gently melt the chocolate with coconut oil in 30-second intervals, stirring between each interval until it's smooth and fully melted. If using a double boiler, place the chocolate and coconut oil in a heatproof bowl over simmering water and stir until completely melted.
  4. Once melted, let the chocolate cool a bit. Using a wooden skewer or fork, dip the kiwi slices into the melted chocolate.
  5. Shake off the excess chocolate and place them on a parchment paper lined plate. Garnish each sliced with sliced pistachios.
  6. Place the plate in the refrigerator for approximately 30 minutes or until the chocolate has hardened. If you prefer a quicker setting, you can use the freezer.
  7. Enjoy your chocolate-covered kiwi treats! They are delicious and good for you too.

  1. If you want kiwi pops, stick popsicle sticks into the kiwi rounds and freeze them.
