  1. In a microwave-safe mug, combine the melted butter/oil, milk, brown sugar, vanilla extract, baking powder, ground cinnamon, nutmeg, and salt. Stir or whisk to combine the ingredients until smooth.
  2. Next, add the flour and mix until well combined. Fold in the shredded carrots. You can also add 1 teaspoon of raisins, and 1 teaspoon of chopped walnuts. Microwave the mug cake for 1 minute and 30 seconds. If it's not fully cooked, microwave it for additional 15-30 seconds. To avoid dry cake, make sure not to overcook it.
  3. You can check the doneness of the cake by inserting a fork or a toothpick. If it comes out clean when inserted into the center of the cake, then it is ready. If it comes out with some batter, then cook it for a few more seconds or until cooked through. Let the carrot mug cake cool before adding the frosting. Top with cream cheese frosting, grated carrots, and chopped walnuts. Enjoy!

  1. I have topped this carrot mug cake with cream cheese frosting, but you can surely top it with any of your favorite toppings. Other toppings that go well in this cake are whipped cream, icing sugar, vanilla ice cream, coconut blueberry ice cream, caramel sauce, or a drizzle of honey on top.
  2. All-purpose flour can be substituted by whole wheat flour, all-purpose gluten-free flour, or oat flour.
