RECIPE INGREDIENTS
» For Butter Garlic Mushrooms
- 300 grams Mushrooms (button or cremini), cleaned
- 2 tablespoons olive oil
- 2 tablespoon butter
- 4 garlic cloves, finely chopped
- 1 onion, sliced
- 1 tsp salt
- 1/2 teaspoon freshly ground black pepper
- 1/2 teaspoon red pepper flakes
- 1/2 teaspoon dried mixed herbs or oregano
- 2 teaspoons lemon juice
- 2 tablespoons fresh parsley, chopped (optional)
» Creamy Herbed Yogurt Sauce
- 3/4 cup thick yogurt (Greek-style or strained)
- 1 teaspoon grated garlic or garlic paste
- 1 1/2 teaspoon lemon juice
- 1/4 teaspoon salt, or to taste
- 1 tablespoon olive oil
- 1/2 teaspoon black pepper
- 1/4 teaspoon red pepper flakes
- 1 teaspoon dried mixed herbs
- 2 tablespoon chopped parsley
RECIPE INSTRUCTIONS
» Preparation
- Chop parsley, slice onions, and finely chop garlic cloves.
- Quarter the mushrooms and set them aside.
» Make Butter Garlic Mushrooms
- Heat a wide pan over medium-high heat. Add olive oil.
- Once hot, add mushrooms in a single layer. Stir occasionally and cook for 2-3 minutes.
- Add butter and cook another 2-3 minutes until golden and the moisture evaporates. Keep stirring.
- Add sliced onion and chopped garlic, and sauté for 1-2 minutes until the garlic is fragrant and the onions are slightly soft.
- Add salt, red pepper flakes, dried herbs, and black pepper. Toss well to combine.
- Switch off the heat. Add lemon juice and chopped parsley. Toss once more.
» Make Herbed Yogurt Sauce
- Add all ingredients to a bowl.
- Whisk until smooth, thick, and creamy. Taste and adjust salt or lemon if needed. Chill for 10 minutes for best texture.
» Serving
- Spoon yogurt sauce onto a wide plate. Spread gently with the back of a spoon.
- Pile hot butter garlic mushrooms on top, slightly off-center.
- Finish with a pinch of black pepper and chopped parsley. Serve with toasted bread, naan, or flatbread.
RECIPE NOTES
- Salt draws out moisture faster, so for better browning, add salt after the mushrooms turn golden.
- Add garlic after browning. It burns easily and tastes best when added at the end.
