RECIPE INGREDIENTS
» For the Homemade Blueberry Syrup
- 1 cup fresh or frozen blueberries
- 2-3 tablespoons brown sugar
- 1/4 cup water
- 1/4 teaspoon ground cinnamon
» For the Blueberry Iced Latte (1 serving)
- 4 tablespoons homemade blueberry syrup (or to taste)
- 1 cup ice cubes
- 1 cup chilled unsweetened oat milk (or any milk of your choice)
- 1 shot (about 30 ml/1 ounce) espresso
» For the instant coffee option
- 2 teaspoons instant coffee
- 2 tablespoons hot water
RECIPE INSTRUCTIONS
» Make The Homemade Blueberry Iced Latte
- Add the blueberries, brown sugar, water, and ground cinnamon to a saucepan.
- Cook over medium heat until the blueberries soften and release their juices. Continue cooking for about 8-10 minutes, or until the mixture slightly thickens and becomes syrupy.
- Remove the saucepan from the heat and let the mixture cool for about 5 minutes. Blend the mixture using an immersion blender (or a regular blender) until smooth. Use the syrup as is for a more intense blueberry flavor, or strain it through a fine-mesh strainer for a smooth syrup. Let the syrup cool completely before using.
» How to Make the Blueberry Iced Latte
- Fill the glass with ice cubes. Add 2-3 tablespoons of homemade blueberry syrup to the bottom of a serving glass.
- Pour the chilled milk over the ice. Top with a freshly brewed shot of espresso. **For the instant coffee version, dissolve the instant coffee in the hot water, let it cool slightly, then pour it over the milk. Enjoy the beautiful layers, then stir well before drinking. Serve immediately.
RECIPE NOTES
- Fresh or frozen blueberries both work beautifully in this recipe.
- Brown sugar can be replaced with maple syrup, honey, agave syrup, coconut sugar, or another sweetener of your choice.
- Use any dairy or non-dairy milk you like. Oat milk makes the latte especially creamy, but almond, soy, coconut, or regular dairy milk all work well.
- The homemade blueberry syrup can be made ahead and stored in an airtight container in the refrigerator for up to 1 week.
