RECIPE INGREDIENTS

- 1/4 cup walnuts, roughly chopped
- 2 cups blueberries
- 3 avocados, sliced
- 2 cups (100 grams) arugula, or as needed
- Zest and juice of 1 lemon
- Crumbled vegan feta, optional

- 1 tablespoon lemon zest
- 2 tablespoons olive oil
- 1 tablespoon maple syrup
- 1 teaspoon Dijon mustard

RECIPE INSTRUCTIONS

- Shake well until combined.
- Slice the avocados just before assembling the salad.
- Arrange the arugula on a serving plate.
- Top with the blueberries and sliced avocado.
- Sprinkle the chopped walnuts evenly over the salad.
- Drizzle the prepared dressing generously on top.
- Finish with crumbled vegan feta, if using.
