- 1 cup walnuts
- 180 grams feta cheese
- 2 garlic cloves
- 1 teaspoon black pepper
- 1-2 tablespoons lemon juice
- 2-3 tablespoons extra virgin olive oil

- 2 tablespoons reserved walnuts, chopped
- 1 tablespoon chopped parsley
- 2 tablespoons crumbled feta
- A pinch of smoked paprika

- Add walnuts to a blender or food processor and pulse until they form a coarse powder. Do not over-blend.
- Reserve a small handful of walnuts for garnish.

- Blend until smooth and creamy, scraping down the sides as needed. If the dip is too thick, add a little olive oil or a teaspoon of water to adjust the consistency.
