RECIPE INGREDIENTS
» For Apricot Cottage Cheese Toast
- 10-12 fresh apricots, halved and pitted
- 4 thick slices sourdough bread
- 1 cup whipped cottage cheese
- ¼ cup roasted pistachios, shelled and roughly chopped
- Olive oil, as needed
- Honey, for drizzling
- Salt, to taste
- Freshly ground black pepper, to taste
RECIPE INSTRUCTIONS
» Prepare the pistachios
- Remove the shells from the roasted pistachios and roughly chop them. Set aside.
» Prepare the apricots*
- Slice the apricots in half and remove the pits. Set aside.
» Grill the apricots
- Heat a grill pan or panini grill over medium heat and lightly brush with olive oil.
- Place the apricots cut side down and grill until soft and lightly caramelized.
- Flip and grill again. Once done, remove them from heat.
» Toast the bread
- Slice the sourdough bread into equal-sized slices.
- Drizzle or brush both sides with olive oil and toast until golden and crisp.
» Assemble Apricot Cottage Cheese Toast
- Place the toasted bread on plates and spread a generous layer of whipped cottage cheese on each slice.
- Arrange the grilled apricot halves on each slice.
- Sprinkle with salt, black pepper, and chopped pistachios.
- Finish with a light drizzle of honey.
