RECIPE INGREDIENTS
» For 2-Ingredient Walnut Date Cookies
- 1 ½ cups walnuts
- 1 cup tightly packed soft dates
RECIPE INSTRUCTIONS
» How to Make 2-Ingredient Walnut Date Cookies
- If your dates have pits, remove them and set them aside.
- Add walnuts to a food processor and blend until they turn into a coarse meal. Avoid over-processing into butter.
- Add the soft dates and blend again until the mixture comes together into a soft, slightly sticky dough.
- Transfer the dough to a mixing bowl.
- Take small portions of the dough and roll them into balls.
- Gently flatten each ball to shape into cookie s.
- Create patterns on top using an onion-tomato slicer. You can also use a fork or knife for simple designs.
- Preheat the air fryer to 160°C (320°F). Place the cookies in a lined air fryer basket, leaving a little space between each one.
- Air fry at 160°C for 9-10 minutes, or until the cookies are slightly firm on the outside.
- Let the cookies cool completely on a cooling rack before serving. They will firm up and develop a chewy texture as they cool.
- Enjoy your delicious 2-ingredient walnut date cookies with a glass of milk, or spread some nut butter for a protein boost and sandwich two cookies together for variety.
RECIPE NOTES
- You can use Medjool or other soft dates for these cookies. Soft, moist dates give the best texture. If your dates are dry, soak them in warm water for 5-10 minutes, then drain well.
- Do not over-blend the walnuts, as they may release oil and turn into walnut butter.
- These cookies are naturally sweet, soft, and chewy with lightly crisp edges.
- For softer cookies, bake closer to 9 minutes. For slightly firmer edges, bake up to 10 minutes.
