  1. In a medium bowl, mash the raspberries with a fork until they reach a pulpy consistency.
  2. Add the chia seeds and maple syrup (or raw honey) to the mashed raspberries. Stir well to combine. The chia seeds will thicken the mixture by absorbing the liquid. Refrigerate for 30 minutes to 1 hour, or until the mixture thickens.
  3. After the raspberry chia mixture has thickened, remove it from the refrigerator. Spoon the mixture onto a plate lined with parchment paper. You can leave them as is or flatten them into disks.
  4. Freeze for about 1 hour, or until they are firm.
  5. Once the raspberry chia bites are firm, remove them from the freezer. Using a fork or a dipping tool, dip each bite into either the melted dark or white chocolate, making sure they are completely covered.
  6. Gently tap off any excess chocolate and place the dipped bites back onto the parchment paper.
  7. Drizzle the dark chocolate-covered bites with white chocolate and the white chocolate-covered bites with dark chocolate for an extra touch. Once all the bites are coated in chocolate, place them back in the refrigerator or freezer to set the chocolate, about 15-30 minutes.
  8. When the chocolate has hardened, the Chocolate Covered Raspberry Chia Bites are ready to enjoy as a sweet snack or a delightful end to any meal.
  9. Store any leftovers in an airtight container in the refrigerator.

RECIPE NOTES

  1. Before using them in this recipe, make sure to wash the raspberries by letting cool water run over them. Then let them dry on a tea towel before mashing.
  2. Instead of chia seeds, you can also use flaxseeds in this recipe.
  3. If you want a jam-like taste in these bites, you can mix thick raspberry chia jam with raspberries to make raspberry jam bites.
  4. I have shaped them like cookies, but you can also scoop them into balls or shape them into cups using a silicone mold or muffin cups.
