  1. Preheat your oven to 355°F (175°C). Peel, core, and thinly slice the large apple. Toss the apple slices in a bowl with cinnamon and brown sugar until well coated.
  2. Place the thawed puff pastry sheets on your work surface, sprinkle some dry flour, and spread evenly on both sides. Cut each pastry into two to create 4 rectangles/squares. On parchment paper-lined baking dish, drizzle honey at least 2 inches apart. Spread it, and then arrange the cinnamon and sugar-coated apple slices on it. Drizzle the apples with a bit more honey.
  3. Place a piece of puff pastry over each of the apple rectangles, leaving a small border around the edges. Crimp all four edges tightly using a fork. Brush the top of the puff pastry with milk or melted butter. This will give the pastry a beautiful golden color as it bakes.
  4. Place the assembled puff pastry on a baking sheet and bake in the preheated oven for 15 minutes or until the pastry is puffed up and golden brown. Once baked, remove the pastry from the oven and let it cool for a few minutes. Carefully invert the pastry so the apple slices are now on top. Garnish with chopped almonds and place them onto a serving platter. Serve warm or at room temperature with a little vanilla ice cream.

  1. For easier handling, make sure to thaw the pastry sheets at room temperature before baking.
  2. You can choose any of your favorite apples for making this puff pastry.
  3. You can swap sugar with maple syrup or agave if you don't want to use sugar.
  4. This upside-down puff pastry tastes best when served warm as they are flaky at this point. But you can also serve them at room temperature.
