Monday is knocking at our doors again! We need vigour to go through the week. We better get started preparing for it then. In this respect, I think Monday goes so well with some spicy, rich and flavor bursting curry. Well, curries and mondays work so well together in my opinion!

This makes me nostalgic: OH. BUT, it’s yet another nostalgic time for me. Why? Because this time I am sharing a delicacy from my home town. And the dish is ‘Jaipuri Aloo Pyaz Ki Sabzi’ aka Potato onion curry. Most of you would know that I am from ’Jaipur, Rajasthan (India). And I absolutely love Rajsthani Cuisine. If this is the first time you are hearing this, then now you know. 😉

Alright, I have something exciting too: Next week India would be celebrating the festival of Raksha Bandhan aka Rakhi. This is a Hindu festival that celebrates the love and duty between brothers and sisters.

Rakhi itself is the name of a sacred thread of protection adorn with the love and affection of a sister for her brother.

You must be thinking, what’s the connection between this ‘Jaipuri Aloo Pyaaz Ki Sabzi’ curry and this festival? As I told you, Rakhi is a festival between siblings. Well, my brother doesn’t live in Jaipur anymore, and neither do I. We only meet about a couple of times a year.

But he always sounds so nostalgic when it comes to food. Yes, he sure is also a foodie like me. Most of the times our chats start and end with some awesome conversation around the dishes we used to eat at a particular point in Jaipur.

Popular and spectacular: This Jaipuri Aloo Pyaaz Ki Sabzi is a popular curry which is very famous from the take away food points. It’s also sold at restaurants, but natives know the taste they get at these takeaway shops.

There are many shops who sell this curry, but the one we like the most is the oldest shop, which is located in the old town.

Get ready for the long queue: If you are visiting Jaipur and you decide that you want this curry for your next meal, then you have to be mentally prepared for the long queue you will have to face when you go to buy this curry at these points.

And 95% of the people are local at this shop because they know where they would get the best flavors and taste. 🙂 And the funny part is that they don’t sell this Potato onion curry according to serving sizes, they sell it in Kilograms. Yes, kilograms.

Everyone wants to eat that curry, but nobody actually wants to go there to buy that Potato onion curry. It’s such an ordeal. They don’t deliver at home, so there is no other option other than going yourself to the shop.

If you want to eat it, then someone will have to go to buy it. OR if not, you have to skip the idea of having that Potato onion curry for dinner. The first option is hard, but the second one is even harder. You can’t resist the idea of not having this curry.

I saw my brother and my sister during my last visit to Jaipur. At that time we planned to have this curry again. And then there was a bigger question “who will go and buy this curry”?

Bond for the lifetime: No one was ready to go, so we all ended up going there together — siblings you know! No matter how old you grow, rivalries between siblings would still be the same. 😉 However, it wasn’t really bad because we all had some really good time together.

There’s this one particular shop which sells this Aloo Pyaaz Ki Sabzi with ‘Bejad ki roti’, a thick flat bread which is made with a combination of flours. That is another delicacy from my hometown, which I should share somtime soon! 🙂

Long term solution: We enjoyed this awesome dinner at home. But we wanted the long term solution for this curry craving so that we can enjoy this curry anywhere anytime we want. So we tried to figure out how it is made, and the next day was our trial day.

We made it at home, and the taste was almost the same. I think the only difference was the frying. We deep fried potatoes and onions in oil instead of ghee. Eating outside is one thing, but when you are cooking the same dish yourself, you try to go with healthier options.

So like the traditional way, frying in ghee didn’t feel comfortable. But yeah! We cracked the recipe. 🙂

And last week I made the same curry and I wished for my siblings to be here with me to taste it.

So what exactly is this curry?

Rajasthani food is considered to be royal food. And royal food needs to feel rich in ingredients. Thus, the authentic food is always greasy and spicy. And this curry is an exact replica of what we Rajasthanis love to eat.

Jaipuri Aloo Pyaaz Ki Sabzi – Potato Onion Curry (Step-by-step photo instructions)

How To Make Jaipuri Aloo Pyaaz Ki Sabzi:

  1. Cut onions into 4 pieces. Cut potatoes into 4 pieces and prick them with the fork.

  3. Boil water in a pot and add salt to it.

INGREDIENTS

For Jaipuri Aloo Pyaaz Ki Sabzi:
  • 4 large or 8 small potatoes peeled
  • 4 large or 8 small onions
  • Oil for deep-frying
  • 1 teaspoon salt
  • 4 tablespoon oil / tel for cooking curry
  • 1 teaspoon cumin seeds / jeera
  • 1 bay leaf
  • 3/4 cup onion paste / pyaaj ka paste
  • 2 tablespoons ginger-garlic paste / adrak lehsun ka paste
  • 3/4 cup tomato puree / tamatar ki puree
  • 2 medium sized green chilies chopped
  • Salt to taste
  • 1 teaspoon kitchen king masala
  • 1/2 tablespoon coriander powder / dhania powder
  • 1/2 tablespoon kashmiri red chili powder / lal mirch powder
  • 1/2 teaspoon turmeric powder / haldi powder
  • 1/2 teaspoon garam masala powder
  • 1 tablespoon butter
  • 2 tablespoons greek yogurt or any thick yogurt
  • 4 tablespoons fresh cream
  • 1 tablespoon dried fenugreek leaves / kasuri methi
  • 1/2 cup water, or as required
  • Chopped cilantro (coriander) for garnish

INSTRUCTIONS:

How To Make Jaipuri Aloo Pyaaz Ki Sabzi:
  1. Cut onions into 4 pieces. Cut potatoes into 4 pieces and prick them with the fork.
  2. Boil water in a pot and add salt to it.
  3. Add potatoes and cook covered for 5-7 minutes.
  4. Once potatoes are boiled, drain them on an absorbent paper and set aside to for 10 minutes so that excess liquid is absorbed.
  5. Add onions to the same water and boil covered for 5-7 minutes.
  6. Drain onions on an absorbent paper and set them aside for 10 minutes to absorb liquid.
  7. Heat enough oil in a pan and deep-fry potatoes and onions until they are lightly golden. Once fried, drain them on an absorbent paper and keep aside.
  8. Heat 4 tablespoons oil in a pan.
  9. Once the oil is hot, add cumin seeds and bay leaf. When the seeds start to splutter add the onion paste.

  19. Now add fried potatoes and fried onions. Toss them until fries potatoes and onions are coated well with the masala.
  20. Add butter, and mix again. Cook covered for 3-4 minutes.
  21. Add chopped coriander and mix well. Remove from heat.
  22. Garnish jaipuri aloo pyaaz ki sabzi with Kasuri methi, coriander, and drizzle with some cream. Serve Jaipuri Aloo Pyaaz Ki Sabzi with hot naan, tandoori roti, or any other flatbread. Enjoy!
