March has already ended, and so the countdown to the Easter. Told ya, that Easter is all in my mind these days. Thus I couldn’t stop myself from posting my first Easter recipe. So I had to come up with an Easter Brunch dessert idea.

And here we go with the most delicious Vermicelli Bird’s Nests. Don’t these look just adorable? But are they edible? Yes, these nests are totally edible. 🙂

Okay now, so let me tell you about these Vermicelli Bird’s Nests. These nests are really great because they come together so fast, which means when that sweet craving hits you during the day — they can be in your mouth in just 30 minutes. A perfect rescue plan, isn’t it?.

I got inspired for these nests from a Greek sweet — Kataifi. Which is traditionally rolled into cylinders, but I thought to make them into nests instead. They look completely delicious and totally Eastery to me! I have added sliced almonds and pistachios for these nests, but you can use any other nuts you like. This is great served with a cup of hot coffee or may be with some ice-cream.

After the undesired sickness of the past two weeks, this week is going to be full of organizing. Thus, I wanted to do a fun recipe which Little-A and I could do in a short amount of time. So this was the first Easter recipe which came to my mind.

And also because I wanted to make some bird nests that would be perfect for the holidays.

Ado also helps me making them. It feels so good when a 3 year old gets into making her own “bird nests” look just right. I must say, this is such a fun way to welcome spring and the baby birds.

Now these nests are just a part of my Springtime/Easter routine since last year. This is because Little-A has been learning about festivals and the meaning of culture for some time now.

So I made these nests thrice during last Easter and this time it has been made 2 times already.

These little birds nests are made from vermicelli. My regular grocery stores do not carry this, so I got these from Asian grocery store. I hope that all of you who want to make them can find vermicelli at any Asian grocery store.

Roast vermicelli and toss with condensed milk, desiccated coconut, cardamom, rosewater and nuts. And then shape them into these little nests and top with some more nuts. Or you can fill them up with mini chocolate eggs, jellybeans or any other Easter candies.

INGREDIENTS

For Vermicelli Bird's Nests //
  • 2 cups vermicelli (sevai), crushed
  • 100 g sweetened condensed milk
  • 2 tablespoons butter
  • 1/4 cup desiccated coconut
  • 1 tablespoon cardamom powder
  • 1 tablespoon rosewater
  • 2 tablespoons almonds, sliced
For Garnish //
  • Pistachio, chopped
  • Almonds, sliced

How to Make Vermicelli Bird's Nests //
