It’s Friday again, and here I am with an awesome and relaxing recipe for the weekend!

Since this is the time for the weekend, I would love to know your weekend plans. I bet you all are doing something fun and relaxing. 🙂

Other than that, we have no plans for the Sunday yet. Only one thing — we are still waiting for ‘THE WARM SUMMER’ days. And I will surely be sitting in my balcony soaking sunlight, if our dearest sun would bless us here by the much needed warmth before this Sunday.

And if not, I will have to sit on my couch, and relax inside! And by relaxing, I mean some real relaxing! No CLEANING ALLOWED this time! 😉

And finally, it’s now time to announce that today is a Smoothie Friday. Thus, I am bringing you a smoothie recipe. And I am also super excited to share this healthy, delicious Coconut Milk Banana Strawberry Smoothie topped with toasted coconut.

Like many other things, I do love smoothies. They are awesome, and with coconut milk, they are just divine ! I seriously can’t think beyond this if I have a glass of a gorgeous smoothie staring right at me. I am serious!

In general, smoothies take over all my senses sometimes, in a good way.

Writing about this smoothie makes me think of smoothie again. OH! I am thinking that I am all in the mood of savoring this smoothie again.

And there is a high chance that I will skip the writing and rush to the kitchen to make a giant glass of this Coconut Milk Banana Strawberry Smoothie immediately. 😉

But, but, but, I will wait, at least till I finish the writing. This is because I want to make myself stronger. Also I have a philosophy to finish what I start! 😀 This philosophy usually keeps me away from all such distractions. 🙂

And if for some other reason I won’t be able to make it today, then I will have to make this tomorrow morning as soon I wake up. I seriously can’t resist it for so long. 🙂

And if I make this tomorrow, a plus point will be that my little princess will be at home, so she can also enjoy this smoothie! Something I told you in an earlier post about Banana Raspberry Smoothie, that my little picky-eater has found her new love for the smoothies! And it still continues, which is good from a mother’s point of view. 🙂

This is a wonderful breakfast smoothie. However, I didn’t make it intentionally for breakfast. But now I suppose it fits well! 🙂

For some of us, breakfast is the favorite meal of the day! Sometimes it is the most important and also one of the most difficult to make, due to lack of time in the mornings! I know we all have to rush in the mornings.

Nothing can beat a healthy, nutritious and a good breakfast. This is in fact the perfect way to start the day. However, on some days we just need something quick and easy.

This Coconut Milk Banana Strawberry Smoothie topped with toasted coconut is perfect for some of those busy mornings. In case you are wondering about the taste — this is the one of the best smoothies. Simply putting it, this is one of the most simplistic and flavorful smoothies.

And also packed full of banana, strawberry, pineapple, and coconut milk. We can even call this smoothie a dairy-free treat.

This time I am using full fat coconut milk, but you can use low-fat coconut milk for your regular everyday breakfast.

Smoothies are the easiest and the most delicious recipes in my opinion — just blend everything and you’re done. You take your first sip and pleasure your tongue with its heavenly taste.

And that’s why I so love smoothies — I would love to have them everyday. However, I don’t make smoothies every day, but yeah, I do make them almost every other day. That’s a fair deal I think! 🙂

You only need banana, strawberries, pineapple, coconut milk, vanilla extract, and some honey. Throw all of the ingredients into your blender and blend.

Blend, blend, and blend until smooth. And you are done! That simple!! See, it’s really EASY.

INGREDIENTS

For Coconut Milk Banana Strawberry Smoothie //
  • banana, fresh - 1 large
  • strawberries slices, chilled - 1 cup
  • pineapple chunks, chilled - 1 cup
  • full-fat coconut milk, chilled - 1 can/15oz
  • vanilla extract - ½ teaspoon
  • desiccated coconut - 2 tbsp
  • honey - 1 tbsp (optional)
For Serving //
  • toasted coconut, for topping
  • fresh strawberry slices
  • raisins

INSTRUCTIONS:

How to Make Coconut Milk Banana Strawberry Smoothie //
  1. Add all ingredients into your blender and blend until creamy and smooth.
  2. Pour smoothie into glasses.
  3. Top with fresh strawberry, toasted coconut, and raisins.
